About the author
Eileen Stellefson Myers, MPH, RD, LDN, CEDRD, FAND has provided nutrition therapy for clients with eating disorders since 1981. The inspiration for this book came when she worked at The Medical University of South Carolina (MUSC) as the Associate Director of the Weight Management Program. As the Nutrition Specialist with the Eating Disorders Program at MUSC, she used this manual as part of her practice and was encouraged by her mentor, Dr. Tim Brewerton, to publish it for others to use. Eileen has published and presented nationally on various topics related to eating disorders and obesity throughout her career and has received the Excellence in Practice Awards from the SCAN, Weight Management, and BHN Dietetic Practice Groups of the Academy of Nutrition and Dietetics.
Charlotte Caperton-Kilburn, MS, RDN, CSSD, CEDRD, LDN, FAND is the owner of NFL Performance (Nutrition For Life Performance) a private practice in Charleston, SC specializing in providing nutritional support to those who are working to recover from an eating disorder and in providing nutritional guidance to athletes of all levels. She recently co-founded SC-COED (South Carolina Coalition for Overcoming Eating Disorders) a 501c3 non-profit organization working to bring hope and healing to people with eating disorders in the Charleston area through the provision of education and networking. Prior to beginning her work in the eating disorder field sixteen years ago, Charlotte was a high school teacher. She started using this manual in her quest to learn more about working in this field. Eileen later became a friend and mentor.
